Black Bean Brownies with a Thumper spice twist!

 

Fudgy, Gooey, Chocolaty makes you want another one, two or three.  You don’t feel weighted down and you are glad you went for the….

 

I present to you black bean brownies.

 

 

 

 

Below is a little info about some of the ingredients called for and most are available at Campbell’s Nutrition in DSM or health markets larger grocery stores and Whole Foods.

 

 

 

So lets get to the essentials:

 

 They are gooeyish, they are chocolaty and they are subtly sweet, more so if you add more sugar. 

 

 

 

They are gluten free and they are tasty! 

 

Prep time is about 15 minutes (not including crock-pot time)

25-35 minutes to cook.


You will need a 13x9 pan

 

30 oz. Black beans

(Rinsed and drained)

 

 

 

4 Neat eggs* (egg replacement made from garbanzo beans*) flax eggs*

 

6 tablespoons (3oz.)  Coconut oil (melted not hot)

 

1 ½ C. Cacao powder* (I used Navita it is vegan, raw and has great flavor, but there may be cheaper brands)

 

½ tsp. Pink Himalayan or sea salt

 

½ tsp. Pure Vanilla extract

 

1 C. Raw Sugar for sweeter brownies add 1/4 c. brown sugar (if you substitute for maple syrup it will be too liquidy)

 

3 tsp. Baking powder

 

½ TBSP coffee or espresso grounds (optional)

 

½ TBSP Cinnamon

 

1 ½ tsp. Cardamom

 

½ tsp. Nutmeg

 

½ C. Enjoy life Chocolate chips more for topping (optional) (vegan-nut and gluten-free)

 

 

Guidance:

 

Your black beans should have either cooled from the crock-pot or have been well rinsed and drained from the can. Add the Black beans to the food processor first and then the egg replacement. 

Pulse a few times until mostly chunky and not beany.

 

Add the rest of the ingredients except the chocolate chips to the food processor and pulse until well mixed and pureed scraping the side of the mixer as you go.

 

When the rest of the mix is super duper smooth add the chocolate chips and mix in well

 

 

 

Add all of the puree to a coconut oiled 13x9 pan put the pan in the oven on 350 for 25-30 minutes until cooked and bam! You have black bean brownies, wait 15-20 before cutting and serve with ice cream or coffee! Or both! Peace Enjoy!

 

 

 

*Enjoy Life Chocolate chips are vegan chocolate chips

Neat is a brand of egg re-placer, the main ingredient is Garbanzo beans
