Veggie Thumper Meatless Meatballs


Surprising meatlovers with meatless creations and shroom haters with mushroom meatballs ‘cause they don’t know unless you tell em :).

Crimini Mushroom benefits- selenium, copper, potassium, phosphorus and zinc. Also B vitamin powerhouse B2 and niacin B1 and B6 plus they have protein!

The Goods

One pound and some change of crimini mushrooms finely chopped. I added mine to the food processer and gave a couple quick pulses

A dash celery salt

Medium onion finely chopped

5 cloves of garlic minced

2 oz. Nutritional yeast or 1oz parm cheese

½ C. GF rolled oats

½ C. bread crumbs (I used rolled oats that I had run through the food processor not finely ground though)

2 neat eggs (brand) or egg replacer or if you aren’t vegan 2 eggs

Herbs

¼ c. Fresh Parsely

1 TBSP and some change Fresh or dried Oregano (not the powder)

1 TBSP and some change fresh or dried Sage (not the powder)

1 tsp. Thyme

1 tsp. garlic powder

1 tsp. Paprika

1tsp. Marjoram

½ TBSP fresh cracked Black Pepper

¼ tsp Celery salt or sea salt of your choice

a little cayenne pepper if you like it hot

Add all of your spices and the dried ingredients to a bowl and mix together now set aside.

Swirl of Safflower oil to your pan or olive oil. Add your mushroom onion and garlic mix to a skillet and cook stirring often

About 10 mins total

Transfer the meatball, onion garlic mix to a glass bowl

Next:

Mix your dry oats, cheese and herbs into the bowl with the mushroom mixture

Mix well, add in your eggs or egg replacement and mix well until everything is slightly crumbly but will still hold together.

Place covered in the fridge for a few hours or overnight for the best texture and flavor.

Fastforward

When the resting period has ended. Roll your mixture into mini balls and place on a safflower oil greased cookie sheet or use parchment paper and cook on 450F for 12-15 minutes they should have a crunchy outside when the timer goes beep beep.

Now if you want you can add your marinara sauce into a pan and add the meatballs and place on a hoagie for a meatball sub or on flat bread or add to various pastas! You can even slice and add to pizza for meatball pizza.
